Located in Melbourne’s South-East, the Dingley Hotel is a substantial two level complex currently undergoing a multi-million dollar redevelopment.

When it is completed it will offer a 350 seat food business incorporating 150 seat Family Bistro, 80 seat Lounge Dining area, 60 seat Café/Function space and 60 seat Al Fresco zone for casual drinking and dining.

The project is being undertaken in two stages given the project complexity and scale and the objective of keeping the business running throughout the building works.

Stage 1 involves building the aforementioned Café/Function space and the Al Fresco zone and running the entire food operation in this area whilst Stage 2, the major dining component (Family Bistro and Lounge Dining zone) and associated kitchens and infrastructure are being built.

The hotel also provides a large Sports Bar, Gaming Room, Drive –Thru Retail Liquor Store, 250 seat Banquet/Function Room (400 person cocktail capacity) as well as a 57 room Motel style accommodation facility.

Seventh Sense was engaged to come on board and provide assistance to management and directors with the start-up of Stage 1.
